The Story Behind the Sandwich
The Ribeye Sandwich is a staple at The Wagyu Bar and will likely become just as popular at our new steakhouse, The Wagyu House. But before all the fame, this sandwich was a favorite in our own home.
While Ribeye is often associated with high-end steaks, you don’t need an expensive cut to make an incredible sandwich—just a well-marbled, tender Ribeye. Lower-quality cuts tend to be chewy, and a good sandwich should be easy to bite into. Our Entrecote and Loin Medallions are actually byproducts of our premium Ribeye cuts, often grading USDA Prime or even Wagyu, despite being labeled USDA Choice.
Ingredients:

6 oz Ribeye (choose a well-marbled cut like our Entrecote for more fat or Loin Medallions for a leaner bite)

Bread (Baguette, Ciabatta, or Burger Bun)
- Salt

Porcini Rub (optional)
- Sauce of Choice (Chimichurri or Grilled Garlic are our top picks)
Time to Cook: 5–10 minutes
How to Make It
- Prep the Ribeye
- Open the package and pat the steak dry.
- No seasoning yet—we’ll cook it first.
- Choose your cooking method: Grill, skillet, or oven all work great. Here is how you cook a Ribeye
- Use at least 6 oz per sandwich.
- Let the steak rest for a minute after cooking.
2. Cook to Perfection (5–10 minutes)
- Cook the Ribeye to your preferred doneness.
- We recommend at least medium so the fat renders and creates a more tender bite.
- But if you love it rare or medium-rare, go for it. And if you prefer well-done, we won’t judge!
3. Slice It Right
- Cut the Ribeye into bite-sized pieces—this is key!
- You don’t want to be pulling the steak apart as you eat.
4. Season & Toss
- Place the sliced steak in a bowl.
- Add salt (and porcini rub if using).
- A drizzle of olive oil can enhance the flavor.
5. Build the Sandwich
o Toast the bread for added texture.
o Load the seasoned Ribeye onto the bread.
o Add a sauce like chimichurri (oh god, chimichurri butter!!) or grilled garlic.
6. Serve & Enjoy: We usually pair it with French fries, but feel free to plate it however you like.
Why Make It at Home?
A Ribeye sandwich like this would cost $16–$28 at a restaurant, but you can make it better at home for a fraction of the price!
