Recipe: Tenderloin tacos like its Cinco de Mayo


So Cinco de Mayo has come and gone... and nobody really cares because it is not really a holiday, its an excuse to celebrate the very best of Mexican culture... or at-least what we Americans consider the very best of Mexican culture. But it does not have to be Cinco de Mayo or any date in particular to INDULGE in the very best of Mexican culture: Tacos.

Today we are blogging about Tenderloin Tacos. Its a VERY simple recipe that needs no sides, its the perfect meal for when you have have guests over or even for impressing your significant other.

Ingredients:

  • Salt (any will do)
  • Sugar
  • Tenderloin (we used grass fed tenderloin, but any will do)
  • Flour and/or Corn tortillas.
  • Red Onions 
  • Hass Avocado
  • Peppers
  • Lemon
  • Cilantro
  • Cheese
  • Sour Cream
  • White Vinegar

Step One: Making the Pickled onions 

Grab a large red onion and cut it into rings or half-moons. Try to slice them as thin as possible... 1/4 inch will do fine. If you want, you can use yellow and white onions too. 

Boil 2-3 cups of water, once the water is boiling add 1/2 spoon of sugar, 1/2 spoon of salt and 3/4 cups of white vinegar. Stirr and let it all dissolve.

Meanwhile, place your cut up onion into a container (we used a mason jar) and pour the hot water mix inside (carefully). Close the mason jar or container and stir it up. Then let it sit for a 30 minutes and your onions are ready... 

When ready to eat, just move the onions from the water. 

Step Two: Making the Guacamole

Some people say making Guacamole is an art.. it is, but its a simple art. There are just 2 key ingredients you need: Hass Avocados and Salt. Everything else is optional.

We like adding a bit of red onions and peppers...

To make guacamole grab a container, if you have a Molcajete its better, but if you do not you can use any container. The KEY is to start with the salt... add salt to the empty container. Afterwards, grab 3-5 hass avocados and open them up, remove the seed and mix them with the salt. Believe it or not, dropping the avocado on top of the salt makes a huge difference.

 

Step Three: Cook the Tenderloin

You can cook the tenderloin any way you like, grill it on gas or charcoal, toss it in a skillet or cook it in the oven. For the purpose of this recipe, it makes no difference.

We added salt and black pepper and tossed it n a skillet and cooked until medium.  

Step Four: Serve

Now its the time to bring it all together. Grab a tortilla, place some guacamole and sour cream, add some tenderloin, pickled onions and cheese.
